How can I (by CSS) give the current (chosen) menu-item a different colour.

To do that, you can use the below CSS code:

.mainnav .current-menu-item a,
.mainnav .current-menu-parent > a{
  color: #05b4ff !important;
}

/* Sub menu */
.mainnav .sub-menu .current-menu-item a,
.mainnav .sub-menu .current_page_ancestor > a {
  background-color: #05b4ff !important;
  color: #fff !important;
}  

To apply it to your site, add it into Appearance > Customize > Additional CSS in your site dashboard.
